It's as true of wine as anything else: all our choices are guided by the principles of freedom and quality, and of respect for our own work, other people's and the land that makes it all possible. We produce less wine than many places, but give our drinkers so much more in terms of history and authenticity.
It's not just work, it's love. It's not just commitment, it's vision. It's believing every day, and never compromising.
This is the Cavedini spirit.
Our three certified organic vineyards occupy 9 hectares, where we grow the native varieties Corvina, Corvinone, Rondinella and Oseleta, as well as Croatina. The vines are supported by specially selected rootstocks designed to get the most out of the unique make-up of the Marcellise terroir.
Use of the Guyot vine training system, winter pruning following the Simonit&Sirch method, careful removal of shots, foliage thinning and bunch thinning increase the longevity of the vineyards by ensuring optimal balance both in the plants and in our production.
Marco performs every intervention on the plants with his own hands and never uses outside help.
“Why do I say that wine is born in the vineyard? Because that's where it all begins. To arrive at a quality wine, it's vital to take care of the soil, the vines and their fruits."
Far from wanting to increase our production, we prefer to focus on producing limited amounts imbued with our guiding principles of quality and personality; this is the idea behind our limited-edition Valpolicella-designation reds.
All grapes used to make our wines come from our own vineyards, where each bunch is carefully selected. We take every care to ensure that the drying of the grapes for our signature wines is carried out under optimal conditions to draw out their characteristics. The vinification process takes place entirely at our own winery and is a strictly controlled process with no external influence. This allows us to really draw out the unique characteristics of our wine.
Our wines age in French oak casks and barrels, taking their time to grow in elegance and depth. We choose the wood carefully, so that it will draw out the aromatic nuances in the wines and increase their harmony and complexity while preserving their unique characteristics.
"We believe in genuine wines that speak of the land they come from and the dedication of the people who create them. We don't look for standardization, rather the expression of their soul. Wines need to speak, to express themselves. They need to be."
